½ cup cashew butter
1 large egg
1 tsp vanilla extract
¼ cup Perfectly Paleo Protein Powder Chocolate or Vanilla
¼ cup coconut sugar or monk fruit sweetener
3 Tbsp cocoa powder
½ tsp baking soda
⅛ tsp salt
¼ cup chocolate chips
Preheat oven to 350 degrees F
Grease baking sheet (coconut/avocado oil spray)
In a medium-sized mixing bowl, combine cashew butter, egg, and vanilla
Add in the remaining ingredients, except chocolate chips, and mix well
Fold chocolate chips into the dough
Scoop dough onto a greased baking sheet (~1 Tbsp dough per cookie)
Press down gently on each cookie with a fork or two fingers to shape the ball into a flat cookie, as they do not spread much upon baking
Bake in the oven at 350 degrees for 12-14 minutes
Remove from oven, cool for 5 min, then transfer to wire cooling rack
