🍪 RECIPE: Choco-LOTS Cookies 🍪

Ingredients

  • ½ cup cashew butter

  • 1 large egg

  • 1 tsp vanilla extract

  • ¼ cup Perfectly Paleo Protein Powder Chocolate or Vanilla

  • ¼ cup coconut sugar or monk fruit sweetener

  • 3 Tbsp cocoa powder

  • ½ tsp baking soda

  • ⅛ tsp salt

  • ¼ cup chocolate chips

Directions

  • Preheat oven to 350 degrees F

  • Grease baking sheet (coconut/avocado oil spray)

  • In a medium-sized mixing bowl, combine cashew butter, egg, and vanilla

  • Add in the remaining ingredients, except chocolate chips, and mix well

  • Fold chocolate chips into the dough

  • Scoop dough onto a greased baking sheet (~1 Tbsp dough per cookie)

  • Press down gently on each cookie with a fork or two fingers to shape the ball into a flat cookie, as they do not spread much upon baking

  • Bake in the oven at 350 degrees for 12-14 minutes

  • Remove from oven, cool for 5 min, then transfer to wire cooling rack

  • ​Enjoy!
